Bolt Face?

You only need to take off enough to even it out, I don't remember any set number
to cut to, if there ever was one........
 
Yes there is. You can usually get away with .01" without causing problems. What you run into is the cam will stop making positive extraction contact on the bolt handle. Worst case is that you need to take the bolt handle off and weld it which i would suggest doing anyways.

I think you're talking about truing the locking lugs, not the bolt face.

Yes i was, my bad. If you are truing up the face there is a few things you need to watch out for to tell you how deep you can go. One big one is watching firing pin protrusion. Another is making sure your not gonna be running into extractor issues. If its still a remmy you might have problems getting it to stay in place. If its a sako then you have to make sure the bottom of the slot in the hook isnt sticking up into the bolt face. I dont think you should have to take more the .005" to clean up a bolt face. If you go more then that i would consider scraping the bolt and getting a pacific or aftermarket one.
 
cutting too much off the bolt face CAN effect the amount of primary extraction, or Cam.

If you were to cut .010" of material off of the bolt face, lug abutments, or the back of the bolt lugs, you will loose that amount of cam. Because it is also relative to the EXTRACTOR. Excesivly cutting the bolt face during a truing job will result in more slop between the fired cases rim and the extractor, requiring the bolt to be drawn back that amount more for the extractor to contact the front of the case rim.
