It is a Pasilla which is a hotter version. They are all over the supermarkets in the west and sw. Pretty standard accompaniment for all meats on my grill !I do love chicken thighs!

When I cook for me it looks like this. Perfect!Weber and lump coal. Much better cook on the picanha this time. I always get nervous when other people come by to cook it too rare but I like it rare.

Ya they call it top sirloin cap here too. If I had to pick a favorite it would have to be chuck eye. But its very hard to find. For BBQ a thick beef rib is my favorite thing you can put in a smoker, blows brisket out of the water for me. In Mt. tri tips were 2.99 a pound, cheaper than burger. So I became an expert at cooking those. Its one of my favorites too. But has to be done right.Picanha is my favorite cut of steak.
Locally it’s called sirloin cap.
I’m also a lump coal fan.
