7mm 175gr. Round nose Soft Point

I am the proud owner of a very pristine 7mm Rolling block. It looks as if never shot but sure it has. I wish to load for it and maybe hunt with it too. My plan is to load a period weight bullet in 175gr round nose Soft point. Should be a good hunting round loaded at around 2300fps. My problem is finding said bullet. I do not wish to shoot factory ammo choosing to fire form my own from 8X57 Mauser. At one time I saw where I could get info as to optimum velocities for specific bullets but what I see now are bullets designed for higher velocities than I intend to shoot. Moreover velocities that would negate their usefulness as a hunting bullet at 2300fps range.
Is their anyone here that enjoys vintage rifles in correct configuration? I realize I could shoot 120gr to 139gr My 7/08 is a testament to preventing me from using my tracking prowess. I do not wish to load the lighter bullet in my roller. I have seen factory ammo in 175gr Soft points but want to be certain what I buy will expand and not just poke a hole in a deer making a day or evening of a search event. Thanks in advance, Doug

Based on my Father's old 1967 Lyman loading manual #44, an accuracy load for 7X57 is IMR 4320 at 2506 fps. The starting load is 38.0gr for 2341 fps and maximum is 42.0gr for 2583.
Instead of shrinking down the necks of 8X57 cases, why not just buy some W-W or Privi Partizan cases, they are both not expensive.

But, before you start, is this gun chambered for 7X57? Most old 7X57 were throated to match a 175gr round nose bullet.
