30 Nosler case trimming

I just finished firing new brass in the new rifle and I’ve just finished FL sizing the brass. My question is what should I trim the cases to? The spec on the reamer lists 2.5660” as the length. The shortest piece of brass that I measured after sizing is 2.495” and the largest is 2.530”. Should I trim everything to the shortest length so they are all uniform?

I'd say don't trim them. I'd shoot them again and see where you are at. Sometimes it's nice to have a bore scope to see where the neck of the brass is in the throat of the chamber.
 
If you’re shooting targets at the local range, set your trimmer to 2.525 and trim them all. The short ones will grow with subsequent firing towards 2.253.

Looks like 2.556 MAX to 2.536 MIN

A Safe bet would be to keep them under the max, unless you know better....
The reamer should be 2.566 MIN to 2.581 MAX, unless it is modified from SAAMI
