Am thinking of having a Savage Axis 25-06 re-chambered to 257AI. It would mean taking about 0.260" off barrel and rechambering to 257AI. Would more be need to be taken off to clean up old chamber?

the .257Ackley will nearly duplicate the 25-06 and use a short action in the process.

1st, I'm not familiar with the length of the Savage threads, but if you have enough threads, I don't see any reason that it won't work. Check the neck lengths but the leade should be basically the same. The AI case is definitely fatter so it will clean the chamber.
